Does the size of the egg you use matter? Is there really a difference when you buy at the grocery store? Could a jumbo egg throw off my dessert recipe somehow?

Technically, jumbo eggs have to be at least 2.5 ounces each; extra large ones 2.25 ounces; large egs, 2 ounces each, medium ones, 1.75 ounces; and small eggs, 1.5 ounces. Though there's always a little variation even between eggs of the same size. Most recipes are written for large eggs, but as long as you're dealing with just a couple of eggs, it won't matter if you use an XL or jumbo guy. If you get work as a Viennese pastry chef or whip up an 8-egg angel food cake, measure by ounces, not per egg. Using 8 jumbos when the recipe assumes yo're using large ones is the equivalent of adding two extra eggs, which will affect the consistency and taste of your confection.
