Oven-Baked Chicken Balls


Ingredients:

1 small yellow onion, diced
1 (4-ounce) bag plain plantain chips, crushed
1 pound ground chicken (see Note)
1/2 teaspoon sea salt
1 tablespoon dried cilantro leaves
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder
1/2 teaspoon ground black pepper
Ketchup, for serving (optional)

Directions:

Preheat the oven to 365°F. Line a rimmed baking sheet with parchment paper.

In a small bowl, combine the onion, crushed plantain chips, ground chicken, salt, and spices and mix until well combined. Shape the mixture into 2-inch balls.

Place the balls on the prepared baking sheet and bake for 20 to 25 minutes. Halfway through baking, turn the balls so that the other side gets nicely browned.

Remove from the oven and serve immediately with homemade ketchup on the side for dipping, if desired.

NOTE: If you can’t find ground chicken in your grocery store, it’s easy to make at home. Simply cut 1 pound of boneless, skinless chicken breasts or thighs into 2-inch chunks, place in a food processor, and pulse. Do not set the machine on automatic; just pulse until you get the right texture. For me, that's about 15 pulses. Voilà—easy peasy.
