Ginger Chicken
Ingredients:
1 tablespoon coconut oil
1 small yellow onion, chopped
1 (2 1/2-inch) piece fresh ginger, peeled and sliced
2 pounds chicken legs
1 teaspoon sea salt
1/2 teaspoon ground black pepper
2 tablespoons diced red onion
Directions:
Combine the coconut oil, onion, and ginger in a skillet over medium heat and cook for 3 minutes, or until the onion is translucent.
Place the chicken legs in the skillet and season with the salt and pepper. Cover with a lid.
Reduce the heat to low and cook, covered, for 35 to 40 minutes. The chicken legs will release juices, creating a gingery sauce. Add the red onion during the last 3 minutes of cooking.
Optional: For more color on the chicken, remove the cooked legs from the skillet and broil for 3 to 5 minutes before serving.
