Barbeque Chicken Chop Salad
Ingredients:
2 heads romaine lettuce, chopped
¾ cup peeled and julienned jicama
2 medium tomatoes, diced
2 ripe avocados, diced
¼ cup chopped fresh basil leaves
¼ cup chopped fresh cilantro leaves
2 tablespoons chopped scallions
¾ cup Ranch Dressing
2 cups diced cooked chicken
¼ cup Barbecue Sauce
Directions:
Toss the first 8 ingredients together in a large bowl. Divide the salad evenly into serving bowls.
Toss the chicken with the Barbecue Sauce and divide it among the salads.
