水解肌原纤维蛋白时,金线鱼胃蛋白酶和猪胃蛋白酶在水解度上差别不大,鱼胃蛋白酶酶解产物的苦味稍低,游离氨基酸略高,可溶性氮的释放速度稍高;在水解大豆分离蛋白时,鱼类胃蛋白酶在水解度、可溶性氮的释放速度、游离氨基酸含量都高于猪胃蛋蛋白酶,苦味值略低,充分展现了在生产低苦味调味品中广阔的的应用前景。
