Most of total plate counts in samples were under 100 cfu g~(-1). The second dominant microorganisms were mold strains,most of enumeration of molds in samples were below 50 cfu g~(-1) except in these samples in which molds had been grown.
研究结果如下:(1)广式月饼中的微生物区系以细菌为主,菌落总数计数大多在100 cfu/g以下;其次是霉菌,除明显发生霉变的样品外,大多数样品的霉菌计数结果低于50 cfu/g,并且2008年产样品中的霉菌计数较2007年产样品要低;最少的是酵母菌,只在3个2007年产样品中检出。
